How to make vellai poosanikai kootu or ash gourd kootu:
1. Grind the ingredients listed under “to grind” without adding water. Pressure cook channa dal until soft by adding 1.5 to 2 cups water.2. Keep the dal aside. Heat oil in a pan and then add mustard seeds. Once mustard seeds splutter, add urad dal and curry leaves. Once urad dal turn golden brown, add the chopped onions.3. When onions turn transparent, add chopped ash gourd pieces. Saute for few minutes until the ash gourd pieces turn soft. Then add the cooked dal and stir well.4. Now add salt, turmeric powder and chilli powder. Stir well and saute until it thickens little. Then add the ground coconut mixture. Allow it to boil for 3 to 5 minutes and then sprinkle coriander leaves.Now, vellai poosanikai kootu is ready! Serve hot with rice.
