Tomato kuzhambu recipe, thakkali kuzhambu. An easy and delicious kuzhambu made with ripe tomatoes and few spices.
Ripe tomatoes give a vibrant color and tanginess to the kuzhambu. The freshly ground spices gives an aromatic flavor to the kuzhambu.
The method is quite simple. First, we saute the onions and tomatoes with spices and coconut. After it cools down, we grind it. Later, we add this ground paste when we cook tomatoes. Voila! tomato kuzhambu is ready!
Tomato kuzhambu goes well with steamed rice, idli and dosa. You can serve tomato kuzhambu with papad and spicy dry curry.
How to make tomato kuzhambu:
1. Heat oil in a pan and saute onions for two minutes. Then add cumin seeds and coriander seeds.Saute for a minute. Add red chillies, curry leaves, tomatoes and garlic.2. When tomatoes turn soft, add coriander powder, cinnamon, clove, and poppy seeds. Saute for a minute.3. Add coconut pieces and saute for a minute. Switch off.4. Transfer the mixture to a blender, add little water and grind until smooth. Set aside.5. Heat oil in a pan, and let the mustard seeds splutter. Add chopped onions and curry leaves. When onions turn transparent, add tomatoes and saute for a minute.6. Then add the ground mixture, little water and salt. Stir well and cook for 10 minutes or until the kuzhambu thickens.Now, tomato kuzhambu or thakkali kuzhambu is ready!
