Spinach soup. A flavorsome, bright and creamy soup made with spinach and onion which makes it not only healthy but also delicious.
Spinach soup is very healthy and filling too. It is packed with vitamins K, C, A, B and rich in folate, iron and magnesium.
In order to have a creamy consistency, we could add corn flour, milk or full fat yogurt. I have added cornflour to get a creamy texture.
We grow spinach at home, and whenever it is sunny, we would drink a glass of green juice. California has been having never stopping rain for the past two months. So, we are switching from green juice to spinach soup. For a cold weather, spinach soup is a comfort dish that offers warmth, flavors and nourishment.
You can make a batch of soup and freeze them for two weeks.So, now you have enough reasons to make this healthy and creamy spinach soup.

How to make spinach soup or palak soup or keerai soup:
1. Heat the butter in a pan. Add onions and saute on a medium flame for 1 to 2 minutes or until the onions turn transparent. Now add the spinach and saute for 1 minute.
2. Once spinach shrinks, add 2 cups of water.3. Cook on medium flame for 5 to 7 minutes, while stirring occasionally. Switch off and allow it to cool completely. Transfer it to a blender.
4. Blend to a fine puree.Strain the mixture with help of a sieve and transfer it to a pan again.
5. In a mixing bowl, dissolve cornflour in milk. To it, add cream and mix well. Make sure there is no lumps.Add cornflour-milk mixture to the spinach puree. Simmer the flame and cook for 2 minutes.6. Add the salt and pepper and cook for 1 minute. Switch off.
Now, spinach soup is ready.Serve hot garnished with cream.
