Schezwan fried rice is a popular indochinese dish. It is bright red in color and quite spicy. Schezwan fried rice is flavored with schezwan sauce. You can use mixed vegetables like carrot, sweet corn, cabbage, bell pepper for this fried rice
Schezwan sauce has a pungent, sweet and spicy flavor. For an authentic schezwan sauce, schezwan peppers are used. If you do not find schezwan peppers, then you can use the dry red chillies. You can use store bought schezwan sauce or make it at home. Refer my schezwan sauce post to make it at home.
We do not eat spicy food. So rarely I make schezwan dishes. I love schezwan fried rice and schezwan noodles. I did not want to buy a store bought schezwan sauce to make just few dishes. So, I always make fresh batch of schezwan sauce to make couple of dishes.
Schezwan fried rice is a flexible dish. You can use any veggies and adjust the quantity of schezwan sauce as per your preference.

How to make schezwan fried rice:
1. Heat oil in a pan, and add white part of spring onions and chopped garlic. When garlic turns golden brown, add the chopped cabbage, carrot and beans. Cook in hight heat for 3 minutes and then in medium flame for about 2 minutes.
2. Add bell pepper and cook for a minute. Then add pepper powder, schezwan sauce, and salt. Cook for about 5 minutes. Then add the cooked rice.3. Mix well gently until the veggies, sauce and rice combines well. 4. Then add chopped green part of spring onion and give a quick stir. Switch off.Now, schezwan fried rice is ready! Serve hot with any indo chinese side dish.
