How to make samai thayir sadam or little millet curd rice:
1. Wash and pressure cook millets with 2 cups of water for 3 to 4 whistles. Once the pressure releases, open the cooker. The millet should be little mushy. Let it cool down.2. Mash the millet with ladle, and then add milk.3. Mix well without any lumps. Then add curd.4. Add salt and curd. Mix well. In a small pan, heat oil and then let mustard seeds splutter. Add urad dal, ginger, green chillies, curry leaves, and cashew nuts. When urad dal turns golden brown, switch off. Seasoning is ready.5.Add the seasoning to the curd rice along with grated carrot, mango and coriander leaves. Mix well.Now, samai curd rice is ready! Serve it with pickle or spicy side dish.
- You can add chopped fruits & veggies like pomegranate, grapes, capsicum and cucumber.
- If you prefer curd rice to be little watery, add little water and curd while mixing.
- You can try the same recipe with other millets like varagu, kuthiravali, kambu etc.
