Pudalangai poriyal recipe, snake gourd stir fry. A simple and quick dal made with split yellow lentils and snake gourd vegetable.
Other names of snake gourd are padwal, serpent gourd, chichinga etc. Snake gourd has numerous health benefits: detoxifies the body, reduces fever, eases the digestive issues, and has antibiotic properties.
Snake gourd is widely used in indian cooking. Pudalangai poriyal is simple and easy to make. Rarely, I get good snake gourd in indian grocery stores. Most often, it would either be broken into small chunks or have a dull and bruised skin. Whenever I get a chance, I would make pudalangai kootu and poriyal. This poriyal goes well with steamed rice and sambar.
How to make pudalangai poriyal or snake gourd stir fry:
1. Cut the snake gourd into small chunks. Discard the white portion (flesh), and cut the snake gourd into thin slices.2. Heat oil in a pan. Let the mustard seeds splutter. Now add urad dal, red chillies, hing and curry leaves. When urad dal turns golden brown, add the snake gourd pieces, turmeric powder and salt.3. Stir well. Sprinkle water and cook covered until snake gourd turns soft, while stirring occasionally. Switch off.Now, pudalangai poriyal is ready! Serve hot with steamed rice and sambar.
