Pineapple sweet rice. A light and sweet dessert with a combination of aromatic rice and sweet pineapple slices cooked with sugar, cardamom powder and milk.

How to make pineapple sweet rice:
1. Add pineapple pieces, sugar to a mixing bowl and mix well. Now, transfer the pineapple pieces to a pan. Add little water and boil it. Once the pineapple pieces have boiled, bring the pan down.
Note. I have used fresh pineapple. However, if you are using canned pineapple, reserve the syrup and boil the syrup with desired amount of sugar. Once it reaches a thick consistency, keep it aside.2. Wash basmati rice, but do not soak it in water. In a frying pan, add 1/2 teaspoon of ghee, fry basmati rice for 1 to 2 minutes and keep it aside. Then, in a heavy bottomed pan, bring 2 and 1/2 cups of water to boil and add the fried basmati rice.3. Simmer fire and cook the rice covered until the water in the rice gets absorbed. Meantime, soak the almonds in hot water and peel its skin off.4. Grind the peeled almonds along with cashew nuts to a fine paste. Also, soak saffron strands in less than 1/4 cup of lukewarm milk.5. Once the rice is cooked, add a pinch of salt, sugar syrup (if you are using the canned pineapple), pineapple pieces and mix well. Now, add the ground cashew-almond paste and saffron-milk paste to the sweet rice. Then, add 2 tablespoons of ghee and cardamom powder and mix well.
