Gobi paratha recipe, cauliflower paratha recipe
How to make gobi paratha or cauliflower paratha:
1. In a large mixing bowl, add wheat flour, salt and oil. Combine and knead well to form a soft pliable dough. Cover it and set it aside for 30 minutes. Meantime, boil water and add cauliflower along with turmeric powder and salt.2. Drain the water and mash/grate them finely. Heat oil in a pan, and add cumin seeds and asafoetida. When cumin seeds sizzle, add chopped ginger and garlic.3. Once ginger and garlic turn light brown, add the grated cauliflower along with salt. Saute for a minute and then add turmeric powder, chilli powder and garam masala powder. Mix well, simmer the flame, close the pan and cook for five minutes. By this time, cauliflower would have cooked well and reduced in volume. Now add chopped coriander leaves and give a quick stir. Switch off the flame.4. Meantime, take a portion of a dough and roll it into smooth balls. Dust it in wheat flour and roll it slightly thicker. Now top it with a tablespoon of gobi mixture on the center.5. Gather the dough from all sides and press it at the center. Again dust some flour and start rolling it gently.6. Roll it carefully without the filling oozing out. Heat a dosa pan, and carefully place the gobi paratha. Drizzle few drops of oil and when you see bubbles start showing up, flip it over and cook the other side.Now, gobi paratha is ready! Serve hot with raitha.
- You can use a grater to grate the cauliflower. I did not have grater so used a masher.
- Rolling the gobi paratha would be easier if the cauliflower is grated.
- You can use finely chopped green chillies instead of red chilli powder. Be careful when you eat it, green chillies would come in between.
