Chow chow peanut poriyal is so simple and classic.It is flavorful, healthy and absolutely delicious. The creamy peanut mixture is what that makes this dish so good.
I still do not know why it took me so long to post this recipe. I learned this recipe ten years ago from a television show in Rajtv.

How to make chow chow peanut poriyal, chayote peanut stir fry recipe:
1. Dry roast peppercorns, red chillies, and coriander powder for few seconds. Switch off and grind it coarsely.2. Dry roast peanuts until they turn golden brown. Switch off and let it cool down completely. Then grind peanuts until smooth.3. Heat oil in a pan, add cumin seeds, red chillies and curry leaves. When cumin seeds sizzle, add onions.4. When onions turn transparent, add ginger garlic paste and saute until its raw smell goes away. Then add chopped tomatoes and cook until tomatoes turn mushy.5.Add chow chow and mix well. Cook for about two minutes and then add turmeric powder, salt, and ground peppercorns-red chillies mixture. Mix well and cook for two minutes. Sprinkle little water and mix well.
6.When it turns dry, switch off. Add a tablespoon of ground peanut powder. Mix well and then add chopped coriander leaves. Mix well.Now, chow chow peanut poriyal/chayote stir fry is ready! Serve it with curd rice, rotis, sambar or rasam.
