Carrot mug cake, single serving carrot cake
A super easy and moist cake made with basic ingredients and grated carrot. Kids will adore this cake for its taste and would not mind the grated carrots in it. This cake has become one of my favorites, so whenever I crave for a cake, I make this quick one minute carrot cake. It satisfies both my craving and hunger.
Carrot have a lot of health benefits. When I was pregnant, I used to have raw carrots so much. I don’t know if its because of the sweetness or crunchiness, like it so much. My mom used to feed me carrot right from my childhood days telling me carrot improves vision. When I was 7years old, on fearing to wear specs, I used to eat two carrots a day. Also carrots promote healthier skin and protects teeth and gums. If we educate our kids about the goodness of carrots, they would listen to us but they would not eat them happily. Carrot mug cake is one way of serving carrots to our kids. They would not mind eating the carrots in the form of carrot mug cake. Now, lets move on to the recipe.

How to make carrot mug cake or single serving carrot cake:
1. In a mixing bowl, combine all the dry ingredients: all purpose flour, sugar, cinnamon, nutmeg, baking powder, and salt.2. Stir in the coconut oil, milk, and vanilla. Combine well.3. Stir in the grated carrot. Again stir it well.4. Spoon the mixture into a baking cup and then microwave on high about 90 seconds.Now, carrot mug cake is ready! You can top it with vanilla yoghurt and pecans.
