How to make carrot kosumalli or carrot moong dal salad:
1. Wash and soak the moong dal for about 1 hour or until it turns soft. Then, drain the water and set the moong dal aside.2. In a large mixing bowl, add grated carrot, chopped coriander leaves, and salt. Mix well and then add the soaked moong dal. Mix well.3. Now heat oil in a small pan. Add mustard seeds and let it splutter. Then add urad dal, cumin seeds, asafoetida, green chillies, and curry leaves. Switch off. Add the seasoning to the grated carrot along with lemon juice. Give a quick stir.
Now, kosumalli/carrot moong dal salad is ready!
