Brinjal fry is crispy outside and soft inside. While adding the spice powders, make sure you don’t add more water because it will make the brinjal soggy. Hence, you would not get the crispier texture. If you just sprinkle water, it is more than enough.

How to make brinjal fry recipe or kathirikai pirattal:
1. Cut brinjal into medium pieces. In a mixing bowl, put besan flour, coriander powder, chilli powder, turmeric powder, curry leaves and salt. Mix well. Add brinjal pieces, sprinkle water and mix well again.
2. In a pan, heat oil. Add fennel seeds, red chilli, and curry leaves.3. Add onion, and green chillies. When onion turns light brown, add the brinjal pieces. Sim the flame and fry well.4. At one stage, brinjal will turn crispy. At this stage, add coriander leaves and switch off the flame.Now, brinjal fry recipe or kathirikai pirattal recipe is ready! Serve with curd rice, sambar and rasam.
