My mom makes aval jaggery during the festival Krishna Jayanthi. Aval jaggery is very easy and simple to make. It basically needs only 3 ingredients: aval/poha, coconut and jaggery. Adding cashew nuts is optional. I would like to add cashew nuts because it give a crunchy feeling when you eat this aval jaggery. Make sure you do not add more water or jaggery to the aval as it would become soggy.
If you like coconut, then you can also add more coconut. It would add more flavor to aval jaggery. At the time of serving, you can even drizzle few drops of ghee. Aval jaggery is a perfect dish to make during festivals. Without further ado, lets jump into the recipe of aval jaggery/sweet poha. Shall we?
How to make aval jaggery or sweet poha:
1. In a pan, add little water and jaggery and bring it to boil. We need water just to dissolve the jaggery. The jaggery should dissolve completely. Set aside.2. Heat ghee in a small pan and roast the cashews until golden brown. Set aside. Now, strain the jaggery to remove impurities and set aside.3. Rinse the aval/poha and soak it in water for 3 minutes. Now add aval/poha and cardamom powder to the jaggery syrup pan.4. Stir well gently until aval and jaggery combines well. Now add the grated coconut. I added coconut powder. Stir well for a minute.5. Add the roasted cashew nuts along with ghee and give a quick stir. Switch off.Now, aval jaggery,sweet poha is ready!
